Chicken Noodle Soup with Mint, Coriander and Lemon

What's not to like? Good chicken stock, strips of roast chicken, noodles and masses of coriander and mint. However, we added carrot and celery julienne, a handful of baby spinach and chives to give it even more colour and our veg for the day.
