This is largely based on
Delia's Spanish Pork recipe, but I added a jar of Spanish butterbeans instead of potatoes this time. I love this recipe - it works in the summer as well as winter, and the smoky paprika from the chorizo is addictive. If possible, make it the day before, as you can remove any set fat (oily sausage and fairly fatty pork shoulder give flavour but render a lot of fat on cooking) and the flavour only deepens with a bit of maturing.
This looks wonderful and it's now on my list of Things To Make - along with the pound cake! I presume it freezes well - i can't see anything in it that wouldn't.

Hi Joy, it freezes very well, but I wouldn't freeze it with the potatoes in if you go down the classic Delia recipe route. The pound cake is still being consumed - it keeps extremely well, too, and is lovely and moist with the apples. Just cut hubby a (small) piece for his lunch, he is still allowed some treats.
ReplyDeleteHey, Im not sure if my comment worked so here I go again. :P The dish looks like what we call Pork Menudo in Philippines and I'm thinking it must be the same. The dish itself has its Spanish roots so I'm quite positive about this. We dont usually put beans tho but I think beans are a good addition. Hi Amy, really good to hear from you! I am sure your dish Pork Menudo will have similar roots, with the influence of Spanish cuisine (amongst others!) in the Philippines. I would love to hear more about your national cuisine. The beans in this make it a complete dish and makes the meat go further, so it is a good economical meal if you are feeding a family.
