More lovely fresh fish from Stein's Deli in Padstow, this time two beautiful red mullet. Again, Nigel gives them a simple treatment, rubbed with a paste of garlic, rosemary and olive oil, then grilled until succulent. Lovely with Jersey Royals and some finely shredded, steamed and buttered, Cornish greens. No online recipe, I'm afraid, but it is as simple as I've described above!
Welcome back, Maggie, I wondered what you were up to! Red mullet is such a lovely fish I think it's a crime to treat it any way other than simply. We like wrapping them in vine leaves (pulled straight off the plant!) with herbs and olive oil, grilling them on the BBQ, and serving with a warm tomato vinaigrette.

ReplyDeleteHi Veronica! Red Mullet is indeed delicious, but very, very difficult to get hold of in land-locked Oxford. There are another 3 red mullet recipes in The Diaries, and I am wondering how to manage them....I shall just have to go back on holiday to Cornwall! The fish there is so marvellous, I should really have cooked with it every day - but then I wouldn't have got to all the brilliant fish restaurants LOL!

I agree that simple is best, when you have a brilliant fresh fish, it seems a crime to gussy it up too much, and simple grilling or BBQing as Veronica describes is the best way to go. Do thry this treatment - the garlic and rosemary really complemented the mullet and so easy too

ReplyDeleteServed up with jersey royals too - delish!! I'm surprised you didn't manage to find red mullet in a local fish monger. I can't wait until I roast a whole red mullet. That's one of the things I'm looking forward to.
My mum's ok, she's recovering well. Even venturing back upstairs! I have a rather long OU study break - first one in three years. Absolutely looking forward to it!
