Mexicano cocktails
Sunday night cocktails are a bit of a tradition in our house, as some of you will have picked up! We try something new each week (although some are such classics that we do have them again from time-to-time - personal favourites being Perfect Manhattans, Margaritas, White Lady, Side Cars, to name but a few, and ANYTHING with Campari in). Tonight's was a lovely 'Martini' style, i.e. a short drink, shaken on ice and then strained into a martini glass. This one consisted of 2 measures of Tequila, 1 measure of pineapple juice, 1/2 measure of freshly squeezed lime juice, and a teaspoon of Grenadine for a touch of colour and sweetness. When shaken, it will have a lovely frothy surface from the pineapple juice. They made a delicious accompaniment to bruschetta topped with soft goats' cheese and roasted tomatoes. ReplyDeleteAnd Campari is just about my fave drink too - I hardly ever but a bottle because I know I will not be able to leave it alone. Wonderful stuff!
Joy: I am sure they put some sort of addictive narcotic in it, as I find it totally irresistible too. Campari is a sort of 'Marmite' drink - you either love it or hate it, but if you love it, it is a deep and abiding love indeed! I use it in a jelly too, with either fresh orange juice or pink grapefruit juice, sweetened with a little sugar and set with gelatine. Served with slices of orange this is a most delicious and refreshing thing after a rich meal - we have a tradition of serving it on Boxing Day as an antidote to all the gorging that has gone on before.
